FETTUCCINE WITH SALMON AND COURGETTE

Ingredients for 4 people:

350 gr La Pasta di Camerino fettuccine
3 medium courgettes
180 gr smoked salmon
1 clove of garlic
1 dribble of extra virgin olive oil
2-3 fresh basil leaves
salt to taste
paprika to taste

Method:

Start by washing the courgettes and grating two of them. In pan with tall sides, heat a little oil and add the grated courgettes. Add the whole garlic, season with salt and paprika and add 2-3 ladles of hot water. Lower the heat and leave to cook for around 10 minutes then add the basil. Cut the third courgette into rounds and lightly fry them on both sides in a frying pan with very little oil. Season and lay the slices of courgette on kitchen paper. Boil the water for the fettuccine and leave them to cook for 6-7 minutes as directed on the packet. Whisk up the courgette cream and if necessary add a further 2 ladles of pasta cooking water then add the salmon cut into pieces. Leave for a few minutes in order for the flavours to blend. Drain the fettuccine and mix them with the dressing adding the sliced courgettes. Mix everything together and serve hot.
